Pound or process the hot spices with the ginger, cloves, salt, pepper and oil in a pestle and mortar until you achieve a coating consistency.

Alternatively, use the smaller bowl and blade fitting of the food processor normally reserved for herbs and baby food.

Slash the skin of the fish diagonally on both sides and smear both sides with the spice mixture.

Sauté the fish in the pan, over medium heat, until both sides are crispy and the flesh is cooked through and opaque.

Meanwhile, make the raita by mixing the yogurt, garlic, mint and grated courgettes together in a small bowl. Season to taste with salt and pepper.
